Cajun Meatloaf
My youngest son just loves meatloaf so I have created a cajun version of this easy dish to remind me of home - New Orleans.
I have included directions to make it Keto friendly if you desire.

Cajun Meatloaf
Ingredients
- 1 1/2
pounds ground beef (mixture veal, beef, pork is best)
- 1 egg
- 1
onion, chopped
- 1 cup whipping
cream (Keto) or milk
- ½ cup
ketchup
- 1 cup dried Italian bread crumbs or cracker crumbs or crushed pork rinds (Keto)
- 1
teaspoon salt and pepper to taste
- 1 teaspoon Cajun spices such as Slap Ya Mama, Tony Chachere's or Emeril. (Note if the Cajun spices include salt, you may want to omit the extra salt)
Topping:
- 2
tablespoons brown sugar
- 2
tablespoons prepared mustard – prefer Cajun mustard but can use Spicy
Brown
- 1/3
cup ketchup
Directions
1. Preheat
oven to 350 degrees F.
2. Cook onion
in a skillet with olive oil/coconut oil for about 10 min stirring occasionally
until transparent.
3. In a large
bowl, combine the meat, egg, onion, milk, ketchup and bread
crumbs/crackers/pork rinds. Season with
salt and pepper, Cajun spices and place in a lightly greased or non-stick spray
in 5 x 9-inch loaf pan.
4. In a
separate small bowl, combine the brown sugar, mustard, and ketchup. Mix well and
pour over the meatloaf.
5. Bake at 350
degrees F for 1 hour.
